Taking Care of your Oil and your Fryer
It's easy to give your oil some extra life by taking care of it with some simple steps:
- During non-peak times, reduce oil temperature to 120°C and only bring to temperature (175°C–180°C) 15 minutes before required.
- Clean your oil at the end of each service with a skimmer and use a cover to prevent contamination when not in use.
- Change your oil regularly to maintain food quality and consistency. If possible, use one fryer for chips and a separate fryer for crumbed product and meats.
- Perform boil-out procedures every 3-6 months with water and cleaning solution as per the fryer’s usage manual. This may be required on a more regular basis for very busy kitchens.
- Load baskets and season chips away from the fryer as this prevents oil contamination and will prolong the oil freshness.
